My use of 11.00 R16 XZL tires is generally in dirt/rocks in the woods. The XZL tires advertised as "All Surface" tires. What little experience in mud I've had with them they've done OK, but I have not had a lot of experience in mud at all, let alone in mud with ZXL tires. (I tend to avoid working in my woods when it's wet. It causes soil compaction, tears up my trails and is a great way to kick off erosion in our hilly terrain.)

Michelins XML tires are their hard-core Mud Tires, and reportedly give excellent results. However, I don't think they are currently made in an 11.00 x 16. The closest I've seen in a 16" rim are 325/85 R16, which is similar OD, but significantly wider than 11.00x16.

James Latham and Ryan Light on the Dodge M37/M43 facebook page were both putting the 325/85 R16 XML tires on their trucks not long ago. I just posted a question there asking how they are working out.
