If you are going to stick the side gaskets to something, it is far better to stick them to the underside of the engine block. If you use the thread method, it would probably be better to tie them to the oil pan. I believe some, if not all, of the threaded holes in the bottom of the block are blind holes. It has been a long time since I have removed and replaced an oil pan and that was on a 230, not a 251.

I have assumed you are using cork/rubber oil pan gaskets. If not, and your gaskets specify to be installed dry, you may want to check this out:
