You chose white oak, which is the best choice for your bed.
I agree with the suggestion of dipping the wood. Or, at least 2 or 3 coats on both sides, both edges, and the ends, after it's cut to length. And If possible, applying to the inside of drilled holes.
I would look at Daly's or Watco products for boat decks.
The wood should be warm in order to accept the product.
And, remember, nothing will stop the oak from bleaching out, except a UV protecting stain or paint.
