1. Drop in oil pressure after achieving operating temp for awhile indicates worn crankshaft bearings or too much clearance.

2. Unless you cleaned the tank and lines, rust or debris can clog at some point in the system restricting gas flow causing the truck to loose power and spurt again until the truck stalls. Letting it set for a short period clears the blockage enough to go until system blocked again.

3. The suction line in the tank can be worn and allows the tube end to lay against floor of the tank restricting flow.

4. If it's a mechanical pump, could be bad valves in pump.

I don't think it's the carb. If you have an electric pump, it can reduce pressure as it gets worn and produce the some symptoms.
