I say clean up only to the extent needed ... mostly stock in usable condition is good clean fun.
Maybe check out a few examples of each approach and see what you can live with? For the time and investment you’re looking at, a week or two visiting other PW owners is minimal effort and you’ll make friends with like-minded people. That is part of the fun, plus parts and ideas.
I can’t guess the outcome but I’m 100 percent that if you drive a few different mods and levels of restorations, the decision will make itself.
