My opinion is that if the truck were amazingly original than keeping it that way and just getting it running is the best bet, but if it's like most of our trucks in that it led a hard life and is going to need a lot of work anyway then honestly I'd say the resto-mod route is probably best.
The number of people who could keep a perfectly restored truck is smaller than the number of people who would buy one they could drive with normal traffic, that's why all these companies are popping up to do those types of conversions on these trucks.
