Why wouldn't you? I mean we could save a ton of money & just spray the chassis & undercarriage of our trucks with rhinolining...that wasn't how they came originally though & so doing that would be as wrong as installing a Ford flathead under the hood.
The bolts were zinc plated when they were new for a very good reason...not to mention zinc plating doesn't look anything like paint...that's enough reason for me...never mind all the other ones.
It's exactly the same as saying "why not paint or powder coat your door handles & "power wagon" logos rather than chrome them? They make really good self etching primer & theres sbsolutely no need to chrome anymore.
