What's the model # on the Eaton? A Clark 280VO is behind the Hercules diesel in my M37. The 280VO is the same as an Eaton/Fuller FS4205.
If the Eaton is overdrive don't be so quick to discard it?
If you do get another transmission think about either a NV4500, or if highway is not contemplated then whatever 4spd works, most likely a Chrysler version NP435.
How much torque/hp does this motor make at what rpm? What size tires are you thinking about? 11.00R16 Michelins, 38.5X11.00-16 Boggers, 38X12.5-16 or 39.5X15-16.5 or 42X15-16.5 Swampers would be good. Or else 12.5R20 (40.7") or 14.5R20 (43.1") Michelins.
But the combination of big tires and big power could be hard on axle shafts, the weak point of your drivetrain.
