1/2 to 1" is usually fine. You just need need to make sure that the throw out bearing disengages from the clutch fingers and enough throw to completely disengage the clutch disk from the fly wheel when the clutch is depressed. You need to spend a little time adjusting and checking it. So basically, adjusting the clutch it is a balancing act to achieve disengagement on both ends. There is usually plenty of throw to achieve disengagement on stock setups that are in good shape. If you have too much play at the top you may not have enough throw to disengage the clutch disk. Too little and the throw out will not disengage. Checking if the throw out is disengaging is not difficult. With a the truck running and out of gear and the clutch at the top of it's throw listen to the noise from the tranny area. Now depress the clutch just past the point where it get hard, you should now be able to hear a new bearing noise. Repeat this several times. You should only start hearing the bearing when you hit the hard point (unless your like me and lost some of your hearing). If you do not hear any difference, the throw out bearing may not be disengaging. You should even be able to hear a new throw out bearing. I will often use my hand to depress the clutch while testing as I can feel the vibrations from the throw out bearing spinning through the peddle.

You may have more than an inch of play in your clutch peddle when your done, if the linkage and pivot point/holes are worn. I use the 1" number as a reference for clutch linkage system that are not worn or sloppy. If your linkage is badly worn, your clutch disk may not totally disengage.
