If you checked the oil before the first start-up and there was no water, then found water after it sat a week, it sounds like a leaky gasket or a cracked block. If you did not check before starting and loading, then there probably was water from sitting for such a long time.
Either way, you probably will have to get it to running temp to get a gasket or a crack to leak. Just sitting cold it might never leak.
