That might work OK for a small house or shed. However for the size of the roof span that that is required for a shop of his size there would be so much extra structural work for the foundation and walls; shear/windload/and lateral forces that it would be cost prohibitive. By the time the engineering was finished there would be very little "mud" left, just a bunch of perlins, reinforcing steel, concrete pilings etc.
These metal buildings are pre-engineered and are about the most cost effective way to build. Some aren't pretty and some are costly to insulate, but the standard steel shop type building cannot be beat for cost per square foot.
