O.T. For you mechanical people, Jeep oil pressure problem

My son has a '97 Jeep TJ with the inline 4.0 engine.
The engine was replaced 8 years ago with a Jasper rebuild of the same type. He only has a few thousand miles on the new engine. I presume the oil pump was replaced also by jasper but don't know.
The engine performs completely normal while driving, and does not overheat, but lately the oil pressure gauge is displaying weird readings that concerned us both.
Sometimes it sits at 40 psi, sometimes down to 10 or so. Sometimes it seems to randomly go up and down. The other day while driving, it was steady at around 10. Other times, it will go up when he gives it gas.
I noticed when I drove it that it would rise while driving, drop a lot at idle.
The oil level was checked and is good. He runs Mobil 1
10-30 in it, and also has an oil cooler he added (1st engine had a piston skirt break on rear cylinder and jeep forum that he reads said the 4.0 sometimes has a problem with that one getting hot- recommended the oil cooler).
Suggestions on best diagnosis and plan?
