carburator question

I have a 230 L6 in my 51 dodge truck, it has a one barrel carter carb. I rebuilt it and have been adjusting the float so that the bowl will stay full and keep the engine running while on the road. My question is How sensitive is the float adjustment in this carburator, where should the fuel level be(just below running out of the carb?) and is there any other adjustments that might make the carb suck the bowl dry(like the fuel air mixture screw). My fuel pump is new and pumping by the way. It will run good if the engine doesn't have to strain for very long, usually wants to go dry when going up a long stretch of hill pretty hard. Idling will let it regain gas, but truck is not very reliable when on a trip, I never know when it might let me down. Hopefully not in an intersection. Thanks for any help on this matter.
