Some guys do what they need to do in order to work. My sons and I poured concrete all year. You just have to make sure to insulate the soil in the bottom of the trench to keep the frost out. Then backfill as soon as possible.
Of course we never had unemployment benefits because we were a partnership, so we couldn't lay on the couch for the winter. :)
