Torque capabilities of stock FFPW drivetrain

I'm still attempting to get a shipper to bring me my '51 so my brain is working overtime in the meantime.
The truck was advertised with a 360 but I suspect it may be a 318 due to the ease of finding a 318 flywheel. Either way, I won't be able to leave well enough alone and will likely freshen the engine a bit.
As far as I know, the rest of the drivetrain is stock ("after" non-syncro trans, etc.)
What is the reasonable torque limit before I need to start worrying about longevity? I saw one spec on the clutch stating 300ft-lb breakaway torque. Any other weak links?
I'm not looking to put a monster engine in, but if it is the 360, I can see cam, intake and headers easily approaching 350lb-ft and I don't want to accidentally build it too strong.
