What they will do is to switch very, very rapidly, on and off. So, that isn't a regulated voltage output. Instead, it is effectively a high-speed electronic version of the point-style voltage regulators. They provide full source voltage, but, only for a given percentage of the time. They should work fine for motors or heaters as long as you limit them to ~50% output if running a six Volt motor on a 12 Volt system, and so on.

Anyway, one thing about the smaller of the two shown: It uses a resettable "Poly" fuse. It's the little yellow square thing. The hotter they get, the less current it takes them to trip. The colder they are, the more current they allow to flow before they trip. So, mounting one by a heater duct or other heat source can cause it to trip undesiredly. Fortunately, they reset when the source voltage is removed.
