You Boo, Boo'd Assuming you're using a NAPA THM 55 thermo which would be correct for that housing, by welding the by-pass, it could have warped the housing preventing the thermo from fully opening up.
With the proper working housing and by-pass, the water circulates in the engine till it gets a certain temperature, then the thermo starts opening. When fully open, the thermo blocks the recirculation an allows water to the radiator for cooling.
