A 360 swap is only slightly more difficult than a 318/Poly swap- it requires either match-balancing a Poly flywheel to the 360's balance, or the discontinued flywheel spacer that Ray used to make. If you haven't read up on the details of a V-8 swap or priced the cost of all of the required parts, it is not cheap, nor a quick swap. Ray no longer makes many of the needed parts for the conversion, so you would have to find them second-hand; the water pump was a nightmare for me to track down... it took months of constant asking and searching for me to get one. The NP435 transmission internals swap/case modification and PTO were other expensive treasure hunts. Then, you'd want better brakes, steering, ad infinitum. I did it, but it took me four years of hunting and saving to get everything. The grand total was WELL over $5000, and I still need a few odds and ends to finish everything. That said...

Your issue is between four things, and four only- a faulty sensor/gauge, too lean of fuel mixture, coolant passage restriction SOMEWHERE, or (and I would almost guarantee this one) it is the fan setup. I ran an electric fan on my never-ever-EVER-overheated-with-the-stock-fan 230 for one summer, to "save drag" on the engine. The result: it overheated EVERY time I drove it. Toss the fan, and do what it takes to mount a stock fan back on it. The only other suggestion is to get the most badass pusher electric fan you can find and install it. If that fails, then look elsewhere for the problem.
