Sounds like a clogged or blocked return port. Something prevents fluid from returning to the reservoir. So releasing the peddle releases the brakes, but it's still sealed from atmosphere where over time pressure can build due to heat in the brakes and it just escalates from there.
The port is usually really tiny and could be easily clogged, or the assembly is jamming and not fully returning to open upon release.
