What does local code require? That is what will drive your decision. If it's an attached garage they will require fire rated sheetrock that is taped along with a fire rated door to the dwelling. If is not attached, requirements could be different depending how close the nearest structure is.
I redid my garage ceiling with 5/8 fire rated sheet rock. The stuff is cheap at about $12 a sheet. I used the 10' sheets to span each stall in my garage. I rented a hoist from Home Depot and did it myself.
