5/8 sheetrock is the standard code-approved method of providing a 1-hour fire wall. Is there some reason you don't want to use that? I don't know of any practical "fire coating" that will do that (I don't think you'll be spraying asbestos cement all over it like a liberty ship), but I'll be interested to hear if others know of some new magic stuff.
