You put the skim coat on and sand as needed. Once you are happy, sand the entire surface with 600 then spray a sealing coat of primer, Then spray with high build sanding primer and sand to get rid of the minor nicks and sanding marks. Do a final sand with 600 or 800 (most paints want a final sand to give bite to the surface so the next coat sticks well) Check the paint specs for suggested grit. . Now your ready for base color then clear coat. You can get tech sheets on the paint that you are using. It will tell you what it can be sprayed over and what you can cover it with. You do not want any reactions with incompatible paints.

I personally spray each part then assemble. this allows you to get all areas. When assembling use painters tape to cover cover areas that might get dinged. For example, I would put a 6" wide strip of tape the top of the cowl and radiator cowl when putting the hood on. Tape it just before installing the hood and remove it immediately after the installation.
