Back about 30 years ago I was in Williamsburg and saw the "Woodwrights Shop". Later I bought both of the books that the Woodwright wrote about the old ways of carpentry.
I recall from that that they used dogwood for gears back in colonial days. Very hard and tough, but not naturally greasy.
