I've gotten two "from" one friend in the last few hours. The message contains a link to a .php file and the "to" list contains a long list of names, some of which I know and some of which I don't.

These things are the result of a virus, usually on some third party's computer (not yours and not the one it claims to be "from"). The virus looks through the person's email address book and sends messages with random combinations of all the addresses it finds in there. It picks one to send it "to" and another to use as the spoof "from" address. When you get a message like that, it only means that both you and the person it claims to be "from" are listed in the infected person's address book. It could be anyone who knows both of you, and there's no way to figure out who it is based on the information in the email. Just don't click on the .php link (or a .exe, .zip, or whatever else it attaches) and you'll be fine. Unfortunately I don't know anyway to stop them. Eventually the infected person figures it out, or the virus expires.
