Condensation forms on the cold side that's against the warm side. That means with a metal interior wall surface, any condensation would be on the shop side of it, where it would at least be visible and not cause hidden mold and rot problems. The vapor barrier should be on the heated side of the wall because that's the side moisture flows from. In terms of moisture and mold, assuming the rain doesn't beat against the outside wall, you're actually better off not having a vapor barrier under the siding.

If I understand your situation, the wall is unfinished inside now and the studs are visible. I would say insulate between the studs with whatever you like to use, staple a poly vapor barrier over that, and then attach the metal to the studs through the vapor barrier. Or just figure the metal itself will be a good enough vapor barrier. With adequate insulation in the wall, I don't think condensation will be a problem. Of course if there are any gaps or drafts, you'll get condensation there so be sure the insulation covers all gaps.
