Squirts out where? Obviously, fluid ending up on the ground is wrong. But, if you have the cover or cap off you may see some fluid coming up in the reservoir.
Bleeding brakes is why wives were invented. Get her to help. "Pump, hold it, release, relax". Any wife/girlfriend can do that. It's sort of like, "Sit, stay, come". :)
Yes the M.C. needs to be vented, usually through the cap, but not always. If you are just bleeding, you shouldn't need to adjust the shoes again.
