I would cut off the vertical members of the bumper/ brush guard. I would only leave the actual bumper tube and the mounts for the gin pole pins. The pin mounts can still be used like a tow hook if you slide a pin through them and they are good for conversation. The bumper is a unique functioning part of the truck so I would not cut it off entirely. Plus, if you do cut it off to put an original bumper on you may discover the frame is bent or twisted and the bolt holes do not line up. Now you have to do a lot more work to make it fit properly.
The bottom line is its your truck and you do what you want.
