I wrote an article in the PWA about the issue of matching or arcing shoes to the drum. Steve Kaegi was the inspiration for me having it done and then doing the article.
My truck stops really well in part due to the fact that the brake shoes "fit" the drums.
There are still businesses in major cities that do this service; they are listed under "friction services" or something similar.
A lot of their work is with the brake shoes used by cranes and the like, but many of them still have the automotive equipment like the one you mentioned.
