Hello, For what it is worth, I will give you my opinion and advice, which probably isn't worth much. Ha! I would just ask around and find somebody who does this kind of thing, word of mouth has always been the best source for me. Before I learned how to do these things for myself I asked around and was directed to an old black guy in E Los Angeles/Watts who was setting on a stool in an old garage, this was back in the 60's. That old guy fondled and rubbed my parts like the were rare jewels or something and the tolerances on everything was perfect when I got them back, and, the price was very reasonable as he didn't have all the overhead, ins. etc.etc.
With all that said, I would encourage you to get the manuals showing the placement of parts and do it yourself, these are real simple and straight-forward assemblies, doubt that they can even be put together wrong and all the parts, brg's and seals and gaskets are readily available. You will have the satisfaction of doing it yourself, gain confidence and save money. If you still don't want to tackle it yourself there are guys who will be glad to help you. You will probably make a good friend who will guide and encourage you in the future with your projects.
I once met an old guy who cast his own flat-head heads, welded and ground his own modified camshafts, put carburetors on the exhaust ports and the exhaust where the intake ports had been and ran the thing at Bonneville back in the old days.
