Have you got the floor in place? It limits how far the pedal will go and should be there when you adjust the clutch. Also, some pressure plates have spacers in them from when it was set up and these have been known to fall out when the clutch is pressed - it's a bad practice and they are supposed to be removed when the pressure plate is done. Second to that if the bits that fell out are indeed clutch facing material, I would pull it apart and inspect rather than bugger it up. If the plate was installed backwards it might be buggered already, so pulling it to check everything might save some time and frustration later. Meantime, it's refreshing to see someone take on one of these trucks with the gusto you have displayed, keep at it and don't forget the feedback.
