251 engine issue

I have been driving the WM300 Open Cab into town just about everyday for a week. 14 mile round trip. There is a issue on startup with the temp needle going right up to the top of the normal range in the first 2 miles then the radiator blows about 1/4 gallon of coolant out the overflow tube in the neck then the needle drops to normal and pretty much stays there. Seems like the coolant likes to run low in the radiator.
Should I just run it like it is or does this sound like a sticky thermostat?
