There is a lot of white oak in PA too - all along the Atlantic seaboard.
Interesting observation - I also know the family that has the local Mennonite furniture making business here.
The patriarch of the operation told me they use almost exclusively red oak for their dining room tables and chairs. He said they prefer red oak for furniture as the color and staining characteristics are more consistent than with the white oak.
He will make custom furniture on request; he told me he made a beautiful sassafras table once for a man who had a big sassafras tree blow down in a storm. I also saw some solid local black walnut cabinet fronts that were made.
