The only thing that I would use on an open trailer would the plastic that they use on new cars. IT will help with bugs and very fine sand.

Do not use a tarp at all if your concerned about the paint. You will never get it tight enough to stop wind flapping which will cause the tarp to wear right through the paint.

Most of what will hit the truck on the trailer will besides bugs will come from the tow vehicle.

What I would do to protect a truck on an open trailer.
1) Put the plastic that they use on new cars on critical areas of the truck.
2) Put heavy duty oversized mud flaps on the tow vehicle.
3) Build a protection wall on the front of the trailer. It does not need to be full height but high enough to catch anything that gets by the mud flaps. You often see short protection walls on snowmobile trailers. If you look at the front of house or closed trailers you can see how high to go and catch most of the debris off the rear tires.

If you are really worried about minor dings in the paint then find a closed trailer.
