Last issue to resolve!

Passed inspection with ease! Now im trying to resolve the last little issue im having. As y'all know i was having an issue with my truck choking out and dying. I found a leaky area right near the fuel tank. I replace the rubber fuel line going into the tank with steal bent which seems to have resolved the leak and and air getting into the system. now the only problem im having now is when im out driving around town i accelerate for a red light get my rpms up to nearly red line, go to 3rd near redline again to get up to speed and not bottleneck traffic to bad but as i switch to fourth the truck will all the sudden act as though it has a fouled plug. The engine will start to choke out, it has no throttle response and acts as though its fixing to die. then it comes back to life and acts like everything is fine. i go on about my merry way cruisin 45 mph again. Its always after lots of rpms in third and then switching to fourth. Im going to get rid of all the rubber hose parts and change to steel, which is what runs into and out of my fuel pump up to the carb hopefully that will help. What do you think it could be besides that?
