I use a drum style carbide burr in a die grinder. Works better for me with a lot less damage to other metal. The crisscross pattern ones don't make the metal splinters as much. I use a heavy knife or gasket scraper between the two pieces and normally pops them right off with no damage to bottom layer.

Nothing is easy and it all takes time. The more you do the quicker it is. I run a hard sanding block over the area and mark all the centers of the spotwelds with a marker.

Congrats on your new career and I'm jealous. Doing something you enjoy makes all the difference in the world.
