I wouldn't attempt to rewind unless I knew exactly what the original was. On the bimetallic ones you have to have the exact same amount of current produce the same amount of heat as it did originally. That means the right material, right length and size of wire, wound on in the same way. Too many things to go wrong, and they you have a gauges that's even less accurate than the original. A 6 volt gauge will survive 12 volts for a little while, so it's generally safe to jump a 6 volt rig from a 12, if you coordinate between the "driver" and the "jumper" so that the "jumper" clips the last connection on, the "starter" immediately cranks the engine, and then as soon as the engine starts, the "jumper" removes the cable. While cranking, the load drops the voltage so it's probably close to 6 volts anyway, and a few seconds of 12 isn't going to hurt it.

There have probably been some 6 volt gauges destroyed by bad jumpering, but I think most get wrecked with the 12 volt conversion.
