If the voltage is the only issue, don't worry about it. It's easy to convert the few gauges (probably just fuel) that need 6 volts, using a proper adapter. But if they're rusty and ratty or the glass is broken I can see why you'd want to replace them. I've taken apart a lot of gauges and repaired them enough for my purposes by cleaning the innards, touching up the paint with a fine brush and a steady hand, and cutting new glass if needed, but they never really look "restored". Personally, I'm more of a historical purist than one who wants things to look really nice, so I'd try to keep the old gauges if they looked half decent and weren't burned out. The voltage issue is minor. But if you're not trying to keep the original look, those Boese gauges certainly look good and would be less hassle than trying to fix the old ones.
