You've posed the BIG question for most DIYer's and I'd like to suggest you take a look at a simple, single-stage, relatively inexpensive yet effective means of protecting those hidden areas=Zero Rust.
Several guys here on your forum have tried ZR and hopefully will chime in here.
Our website describes the prep process, which can be thorough or marginal-your option. No media blast is required.
We suggest no rust converters before using ZR, as our experience indicates it can become the weak link-put another way, it ain't necessary. Rust that can't breath, can't grow-it's as simple as that.
You are right on concerning protection of those backside areas, as they can be MORE important than any other areas in the restoration process.
