Your fitting has no shoulder for the gasket to seal against, so is going to pee fluid. A bolt would have a head to seal the gasket.
But I do just fine with a 2x4 cut to length to hold the pedal down. Simply pump the pedal a few times, and hold it down with the block. Go open the bleeder, let it bleed, close the bleeder. repeat. Refill the master often. Leave the l/f for last. For that one I just reach up and pull on the pedal.
