I would use grade 5 bolts they are very strong and less prone to shearing. Grade 8 bolts are so hard they dont really bend or stretch under severe torque load they just snap off grade 5 bolts are strong enough for the task and would give little bend or stretch and bounce back into shape without the shearing effect just what I was told by an engineer many years ago so I use grade 5 bolts if I am using bolts on a project that is going to be subjected loads by torqueing instead of just metal to metal joining guess my rule is if it is something that could be welded but I want the take apart without cutting grade 8 bolts if it is going to be subjected to and torqued at alot grade 5 bolts
