It sounds like all the terminals on the solenoid are completely isolated from each other, which is good. You might check that there's no continuity from the housing/ground to any of the terminals. The power terminals are probably fully isolated, but it could be that the coil terminals are connected to ground on one side. The way you envision it, when this solenoid is open, will you be completely disconnecting both batteries from the ground? If that's the case, how will you get power to flip the solenoid back into the "on" position? It seems to me like you'd have to run at least wire from the battery - to your control switch so that it would have power even if the rest of the boat is de-energized.
