It is always a good idea to put the parts back in the spot they have worn into, but like Bruce says it shouldn't matter too much on the valves as long as the guides are good. Daryl brings up a good point of new guides and checking to see what, if anything, the other owner had done. Check the guides, cut the valve faces if needed, and lap the valves in. I always like to apply some of that older lead based valve guide lubricant when it goes back together. You will most defiantly need to check the clearance from lifters to valves.
