Making a wiring harness

I am about to remove the old wiring harness from a '47 WDX and make myself a new one. Any words of wisdom?
In the new one I will be eliminating a couple wires since I am now at 12 volts and I will be adding a few for an electric fuel pump and turn signals. I am going to stick with the same guage wire and most of the same color wires.
Any opinions towards solderless vs. solder connectors? (I hate soldering) How about wrapping with electrical tape vs. the plastic conduit stuff they sell.
Also how do I access the brake light switch, I can't find the darn thing.
Is this a worthwhile project? Any particular good methods to go about this. Any other wires I should add for future addons?
