I guess you could measure along the cab and chassis to see how long they need to be?
Or, what I did, was loop the old harness on a sheet of particle board, in a big spiral. Nails anydamn place through the harness, and nails through the eyes on the ends of the wires. Then one wire at a time laid on top of it's match.
I used a bin full of wire someone gave me. All vinyl, much was teflon coated.
Add some extras, like ground loops for tail end and headlights, gas tank too, back up light circuit, etc.
