Stay Mopar. Spark plugs won't be a problem, nor will the exhaust manifolds. There's plenty of room even with the power steering. As for bellhousing, , I just use the 69-up bellhousing that is common as dirt and make a transmission crossmember to support the trans at the tailshaft. I don't even bother with the 61-68 bell and rear adapter mounts that Helitool recommends. There are lots of trucks out there way more powerful than 360s running three point mounting and they're holding up fine. If you have other questions, feel fee to call me at 412-400-7281
