Engine swap in the field

Suppose you had to go and and replace an engine in a truck that had just thrown a rod (or otherwise eaten itself up internally) out in the field. What would you take with you to be sure you could do the job and not have to come back to town for more tools or supplies?

The truck is a Wittenberg conversion M37, civilianized (12 volt, civilian carb) and with the Wittenberg 1-piece butt-ugly fiberglass hood/fenders (at least access is easy). A wrecker is available for the heavy lifting. Two take-out spare engines are available to choose from, both of which were alleged to have "run when removed", but are otherwise in unknown condition. The transmission will need to be swapped onto the replacement engine. Any ideas for any easy way to see how good either of the spare engines is before installing it? Is it better to pull the engine and tranny as an assembly rather than leave the tranny in the truck? Any special tools needed? Any tricks?
