Is that water, or a cam plug?

Many engines have a plug where the cam borer cam out the back end of the block. No need to change those.

I think my parts book only lists 6, five on the side and the small one over the temp sender.

The one over the that sender is there so you can pop it out, and get in there to pry the sender out of the block without breaking the tubing.
