I have built and restored antique Chris Craft boats for 30 years. Building a Woodie
would be no different from boat building.

Many of the boats I have restored have not had one piece of useable wood in them. They are called pattern boats. You use each piece of wood for a pattern to make a new one. If done correctly, when complete you can not tell it from just a restoration. A friend who is in the boat restoration/building business went to a Museum in the north east, over a period of time he made drawings and plans for a 30' Gold Cup race boat on display. He then built a new one exactly like the original right down to the brass castings. You can not tell the original from the replica.

So, to build a Woodie, you need good wood working skills, plans or another Woodie to make drawings from and copy. Sounds hard, really it is not. But it will take a lot of time.
If you dont figure your time, wood, screws, glue and finish coating would be quite cheap.

Even with my experience, without either plans or one to copy, I would not tackle the job.
