Jim,
If you decide to not go diesel or go with Jasper (both are good things to consider), I have a suggestion for finding a local shop up there for your engine.
I had mine done by an older man down here in my county in Maryland. They way to find the people who can do this sort of work is to go through the Ford Model A or T groups in your state. There are usually quite a few of these folks and they will know what machinists are willing to handle flatheads as well as having the necessary equipment.
For example my engine's head, when measured, was slightly warped and he planed it flat. Also, he balanced the pistons and rods, etc while it was apart. There is now NO perceptible vibration at all when it is idling. I assume that means that it could rev higher than a typical engine, but I do not tempt fate with that.
