You will probably be limited by battery and storage. You can get a small hand held video camera that can have 4 hours of storage ability. However the battery life is usually half that which may mean changing batteries midstream.
Hunters use cameras that take pictures only when infrared light is tripped, and can film at night. They can typically be left up for days to a week at a time and take pictures only when a significant heat source is near. That might be a better choice
